Ann Vileisis' new book, Kitchen Literacy is a history of why we know so little about what we eat.
As America urbanized and our food system industrialized at the turn of the 20th century, people's relationships to food changed markedly. Where our foods are raised and what happens to them between farm and supermarket shelf have become mysteries. How did we become so disconnected from the sources of our essential daily nourishment?
Ann Vileisis's answer is a sensory-rich journey through the history of making dinner. From eighteenth-century gardens and historic cookbooks to calculated advertising campaigns and sleek supermarket aisles, Kitchen Literacy chronicles profound changes in how Americans have shopped, cooked, and thought about their foods through two centuries.
She also discusses how the movement toward eating local and organic is gaining ground and giving us new opportunities to find healthier, better-tasting fare and to learn the stories behind our foods once again. By revealing the history of how we've known—and not known--our foods, Kitchen Literacy promises to make us think differently about what we eat.

Ann Vileisis in an environmental historian, writer, and scholar. Her writing has won a number of awards and fellowship, including awards from the American Historical Association and the American Society of Environmental History. Ann lives on the south coast of Oregon, where she is involved in local issues of environment and agriculture.
